Lot DT 05 - 02/02: Diadorim (LOT 02)

The romance The Devil to Pay in the Backlands (Grande Sertão: Veredas) narrates the story of a jagunço named Riobaldo around 1930 in the northeast of Brazil - jagunços were armed groups who worked as bodyguards or hitmen. Among his adventures with the group, Riobaldo finds himself in love with his gang partner DIADORIM. Even though Riobaldo is very troubled by his feelings and doesn’t fully understand them, he does know that a homosexual relationship is just impossible among the though gang members he lives with. To him, Diadorim is a mystery: he doesn’t speak much but is always beside Riobaldo. Their relationship grows closer and more complicated over time, until Diadorim’s tragic death. At the last pages, the reader finds out that Diadorim was a woman all along - she disguised herself the whole time to join the gang.


We chose to name this coffee after Diadorim because, just like the jagunço, it’s complex and full of surprises: the cup presents the delicate flavors of peach, pineapple, and marmalade, but also has layers of complexity with rhubarb, cocoa nibs and umami – like two identities in one.


The Gesha varietal, original from south Ethiopia, is very popular in specialty industry for its excellent profile – in Daterra’s terroir, the Geshas usually present herbs aromatics and sugar cane sweetness. We handpicked the cherries and placed them inside a fermentation tank equipped with an airlock valve - this system allows oxygen to get out of the tank but stops anything from getting inside. As the cherries ferment, they release CO2 and because carbon dioxide is denser than oxygen, it pushes the lighter gas out through the valve. After a few hours, the tank environment becomes completely anaerobic and allows certain microorganisms the perfect conditions for fermentation and enzymatic reactions to happen inside of the beans.
